Ingredients

  • 1 cup reduced-calorie mayonnaise
  • 1 cup chopped cooked shrimp meat
  • 1 cup shredded Cheddar cheese (or Parmesan cheese)
  • 1 teaspoon garlic salt
  • 1 French baguette or 4 ciabatta bread

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.

  • Combine mayonnaise, shrimp, Cheddar cheese, Parmesan cheese, and garlic salt in a large bowl. Cut baguette (ciabatta) in half horizontally. Spread mixture over 1 side of baguette (ciabatta). Arrange the slices into a 1 layer on the baking sheet.

  • Bake in the preheated oven until brown and bubbly, about 15 minutes.

To make ahead of time, cover and freeze shrimp toast until well chilled, about 30 minutes. Remove and cut shrimp toasts into quarters and place in a plastic bag. Return to freezer until ready to use.
