- 900g beef sirloin, cut into cubes;
- 3 garlic cloves, minced;
- 1 tbsp. fresh lemon zest;
- 1 tbsp. fresh parsley, minced;
- 2 tsp. fresh thyme, minced;
- 2 tsp. fresh rosemary, minced;
- 2 tsp. dried oregano;
- 4 tbsp. olive oil;
- 2 tbsp. fresh lemon juice;
- Sea salt and freshly ground black pepper;
- Wood or metal skewers;
Instructions
- Combine all the ingredients except the beef in a bowl. Give everything a good stir, and season to taste.
- Add the beef to the herb mixture and let marinate for at least 15 to 20 minutes and up to overnight in the refrigerator.
- Preheat your grill to medium-high.
- Remove the meat from the marinade, and slide onto wood or metal skewers.
- Cook on the grill for 6 to 8 minutes, turning every 2 minutes.
- Remove from the heat, and let rest for 5 minutes before serving.
